Turns a family sauce into an arrabbiata without another ingredient.
Ingredients
- 2 onions, 2 carrots, 2 sticks celery, all finely diced
- 4 cloves garlic
- 2 × 400g tins chopped tomatoes + 500g passata
- 2 tbsp Sweet Sting Hot Honey
- A large bunch of oregano or basil stalks
- Olive oil, salt
Method
- 01
Sweat the onion, carrot and celery in olive oil over low heat for 20 minutes. This is the whole sauce — do not rush it.

Add the garlic for a minute, then the tomatoes, passata and herb stalks.

Simmer uncovered for 90 minutes, stirring now and then, until it darkens and pulls away from the sides.

Stir the hot honey in at the END, off the heat. Added early it cooks out; added late it balances the acid and stays warm.

Blitz smooth or leave rustic. Freezes in portions for three months.
