Ingredients

  • 3 red onions, sliced thin
  • 200ml cider vinegar
  • 3 tbsp Sweet Sting Hot Honey
  • 1 tsp salt
  • 1 tsp coriander seeds
  • 1 bay leaf

Method

  1. 01

    Pack the sliced onion into a clean jar. It will look like far too much. It is not.

  2. 02

    Warm the vinegar, hot honey, salt and spices until the honey dissolves — do not boil it.

  3. 03

    Pour over the onions, pressing them under the liquid.

  4. 04

    Cool, lid on, into the fridge. Edible in an hour, properly good the next day.

  5. 05

    Cut the vinegar by a third if you like it sweeter — the hot honey already brings acidity of its own.
