Ingredients
- 400g haloumi, sliced 1cm thick
- 8 small tortillas
- 1 red onion, pickled
- 1 avocado
- Coriander and lime
- Sweet Sting Hot Honey
Method
- 01
Dry the haloumi well on a tea towel — wet cheese steams instead of browning.

Fry in a dry non-stick pan over medium-high, 2 minutes a side, until deeply golden.

Take the pan off the heat and spoon hot honey straight over the cheese in the pan. It will hiss and glaze.

Warm the tortillas. Build with avocado, haloumi, pickled onion and coriander.

Squeeze lime over and add more hot honey than feels sensible.
