Ingredients
- 400g halloumi, sliced 1cm thick
- 250g strawberries or blackberries, halved
- 2 tbsp Sweet Sting Hot Honey
- 1 tbsp balsamic vinegar
- Mint leaves
- Cracked black pepper
Method

Toss the berries with the balsamic and half the hot honey. Leave them 10 minutes to slump.

Dry the halloumi on a tea towel — wet cheese steams rather than browns.

Dry pan, medium-high, two minutes a side until deeply golden.

Off the heat, spoon the rest of the hot honey straight over the cheese in the pan so it glazes.

Plate the halloumi, tip the berries and their syrup over, then mint and pepper.
