Doubles down on the mustard and saves you measuring two things.
Ingredients
- 1 half leg ham on the bone, about 4kg
- 150g Sweet Sting Hot Honey
- 2 tbsp wholegrain mustard
- 1 tbsp apple cider vinegar
- Whole cloves, to stud
Method
- 01
Heat the oven to 160°C fan. Run a knife under the rind and peel it back in one piece, leaving the fat behind.

Score the fat in a diamond pattern about 5mm deep — through the fat, not into the meat — and press a clove into each corner.

Warm the hot honey, mustard and vinegar together until just loose. Do not boil it.

Brush a third over the ham. Bake 25 minutes. Brush again, bake 25 minutes, then a final coat for the last 20.

Rest 20 minutes before carving. The glaze firms as it cools.
