Ingredients
- 2 racks pork ribs
- 1 tbsp allspice, 1 tsp cinnamon, 2 tsp thyme
- 4 tbsp Sweet Sting Hot Honey
- 3 tbsp dark rum
- 2 tbsp cider vinegar
- 3 cloves garlic, grated
Method

Peel the membrane off the back of the racks or the rub never gets in.

Rub with the spices and salt, wrap in foil, and bake at 150°C fan for 2 hours.

Simmer the hot honey, rum, vinegar and garlic for 5 minutes until it coats a spoon.

Unwrap the ribs, brush generously, and blast at 220°C fan for 12–15 minutes until lacquered.

Rest 10 minutes, then cut between the bones. Serve the rest of the glaze alongside.
