Goes well with
Down & Dirty Mustard
Mustard against sweet kūmara, which is a better idea than it sounds.
Ingredients
- 3 large orange kūmara, cut into wedges
- 2 tbsp olive oil
- 150g feta
- 3 tbsp Sweet Sting Hot Honey
- Coriander and toasted pumpkin seeds
Method
- 01
Heat the oven to 220°C fan. Toss the kūmara with oil and plenty of salt.
- 02
Spread on a tray with room between the pieces — crowded kūmara steams and stays pale.
- 03
Roast 30–35 minutes, turning once, until the edges are genuinely dark.
- 04
Tip onto a platter while hot, crumble the feta over so it softens.
- 05
Drizzle hot honey generously, then coriander and pumpkin seeds.
