Leans into the barbecue rather than against it.

Ingredients

  • 500g raw prawns, peeled, tails on
  • 3 tbsp Sweet Sting Hot Honey
  • 1 tbsp olive oil
  • 2 cloves garlic, grated
  • Juice of 1 lime
  • Coriander, and skewers soaked if wooden

Method

  1. 01

    Toss the prawns with oil, garlic and a pinch of salt. Thread onto skewers.

  2. 02

    Very hot barbecue or griddle. Two minutes a side, no more — they carry on cooking off the heat.

  3. 03

    Take them off and brush generously with hot honey while still hot.

  4. 04

    Squeeze lime over and scatter coriander.

  5. 05

    Never glaze before grilling. The honey burns before the prawn is cooked.
