Ingredients
- 2 salmon fillets, skin on
- 2 tbsp Sweet Sting Hot Honey
- 1 tbsp soy sauce
- 1 tsp lemon juice
- Rice and greens to serve
Method

Dry the skin thoroughly and season. Into a cold non-stick pan, skin down, then turn the heat to medium-high.

Press gently for the first 30 seconds so it doesn't curl. Cook 5–6 minutes until the skin releases on its own.

Flip for 1 minute only.

Off the heat, add the hot honey, soy and lemon. It will bubble and thicken in the residual heat.

Spoon the glaze over and serve immediately — it goes claggy if it sits.
