Ingredients
- 1.2kg chicken wings, split
- 1 tbsp baking powder (not soda)
- 4 tbsp Sweet Sting Hot Honey
- 50g butter
- 1 tbsp apple cider vinegar
- Salt and cracked pepper
Method

Toss the dried wings with baking powder and salt. This is what makes the skin crisp without frying.

Rest uncovered in the fridge for an hour if you have it. Skip if you don't.

Bake at 200°C fan on a rack for 35–40 minutes, turning once, until blistered.

Melt the butter with the hot honey and vinegar.

Toss the wings through the glaze and serve immediately, with something cold.
