Swaps the sweetness for something fruitier and considerably hotter.
Ingredients
- 2 chicken breasts, butterflied and beaten thin
- 1 cup panko
- 1 egg, beaten
- ½ cup flour
- 1 red onion, sliced thin
- ¼ cup apple cider vinegar
- 4 thick slices sourdough
- Sweet Sting Hot Honey, to finish
- Mayonnaise and shredded lettuce
Method
- 01
Cover the onion with vinegar and a pinch of salt. Leave it while you do everything else.

Flour, egg, then panko each piece of chicken, pressing the crumb on firmly.

Shallow fry in 1cm of oil, 3–4 minutes a side, until deep gold. Drain on a rack, not paper.

Toast the sourdough. Mayo on both sides, lettuce down, schnitzel on top.

Drizzle hot honey generously over the hot schnitzel so it sinks in, pile on the pickled onion and close it up.
