Lamb and smoke, which needs no argument.
Ingredients
- 600g lamb mince
- 50g pine nuts, 50g raisins, roughly chopped
- 1 egg and 60g breadcrumbs
- 700g passata
- 1 tbsp Sweet Sting Hot Honey
- 400g spaghetti
Method

Mix the lamb, pine nuts, raisins, egg, breadcrumbs and plenty of salt. Roll into 20 balls and chill 15 minutes so they hold.

Brown them all over in a wide pan. They do not need to cook through yet.

Add the passata and hot honey, cover, and simmer 35 minutes on low.

Taste the sauce before serving — if it is still sharp, another teaspoon of hot honey rather than salt.

Cook the spaghetti, and finish it in the pan with a ladle of sauce so it grips.
